MOOLI PARATHA

Raphanus sativus var. longipinnatus, commonly known as daikon or mooli, is a mild-flavored winter radish typically distinguished by its long, white, napiform root and rapidly growing leaves. Although daikon originates from continental East Asia, it is grown, consumed, and sold abroad in South and East Asia. Daikon is not collected in some places; instead, it is cultivated to loosen compacted soils and replenish nutrients.

RECIPE OF MOOLI OR RADDISH PARATHA:

RADISH PARATHA

Ingredients for Stuffing: 
  • Three mooli (radish).
  • salt to taste. 
  •  teaspoon red chili powder ·
  • Half a teaspoon of powdered Coriander
  •  2 tablespoons of coriander leaves.
  • Two green chilies are finely chopped. 
Ingredients for dough:
  • Oil for frying mooli parathas.
  •  2 cups wheat flour.
  • salt to taste.
  • water as needed.
DIRECTIONS FOR MOOLI PARATHA:
  • Salt and wheat flour should be sieved. 
  • Stir in water and knead dough until stiff. Put a cover on and set aside. 
  • Grate and peel the radish. Empty and squeeze out all the liquid. 
  • After preheating the pan, lightly brown the radish. 
  • Mix thoroughly after adding the salt, red chili powder, green chilies, and curry leaves. Let it cool.
  • Roll out a tiny ball of dough.
  •  Stuff it with two tablespoons of stuffing, and seal all the edges. 
  • Once more, roll into a thick, spherical parantha. 
  • Mooli ka paratha should be heated and fried till crispy and brown on both sides. Spread a little oil on the paratha. 
  • Warm mooli paratha should be served with curry or raita.
